“The dish in question was a 80 or 90 day dry aged beef “shabu shabu”. Visually, A small bowl with a sizable mound of medium rare pink beef slices in yellow broth. Except the broth wasn’t a traditional kombu dashi flavored w soy or such, just rich concentrated beef consommé (quite viscous). But it was hot enough where it was lightly cooking the thin raw slices of dry aged beef - presumably strip or ribeye. This was absolutely divine and a really interesting east west fusion (I also hate that word but whatever).”
