replying to u/Kooky_Comb6051: I’d prob go with like Cesar, Jungsik, or Atomix. They really represent the “now” of fine dining. There are also other institutions that have been around that exemplify old-school white table cloth fine dining line Eleven Madison Park, Le Bernadin, Per Se, Chef’s Table, jean-Gorge.
