replying to u/worrymon: I love my cookies warm and gooey. I haven't found a place that does them the way I want them so I just make up some cookie dough, freeze it in cookie size clumps, and then undercook them in the toaster oven. Levain won't scratch the itch for you. They taste fine, but they're more like hard little cakes. If I remember correctly, Zaro in Grand Central has cookies that will still slowly bend and rip and remain soft for quite a while after they cool. I think Schmackary's made a decent soft cookie as well.
