replying to u/DinerEnBlanc: Adding to this, Afuri, Taishoken, and OKONOMI / YUJI Most ramen joints specializes in one or two specific styles of ramens though, so OP should pick based on his preferences. For Shoyu, I’d go with Shuya or Ramen Ishida. For Tonkotsu, I’d go with Tonchin. For Shio, I’d go with Afuri or Shuya. My personal picks of course, but that’s not to say the other places doesn’t serve good ramen.

replying to u/panzerxiii: Definitely don't give up on ramen after Tonchin. There's so many other styles, even within the kotteri bowls, if that's what you enjoy most! If you haven't, you should check out the following joints if you like kotteri ramen: * Okiboru - niboshi tsukemen (get soup wari after you finish noodles!) and great tontori ramen as well * NONONO - insane tori paitan, and the food is great (nose to tail butchered chicken izakaya menu) * Jeju Noodle Bar - Michelin Starred Korean take on Japanese ramen. They do a stunning gyukotsu, but nothing is bad to order here * Rockmeisha - no-nonsense Hakata-style tonkotsu and fantastic food overall * Ramen Danbo - no-nonsense Hakata-style tonkotsu * TabeTomo - Jiro-style * Za-Ya Ramen - gyukotsu * E.A.K. Ramen - Yokohama ie-kei style ramen I don't think all of these spots are necessarily better than Tonchin, but offering some inspo for other styles and variations on that general type of ramen. And once you get tired of the super heavy stuff, you can join me on the assari ramen dragon chase, where there's even more crazy variations and interesting flavors! Sadly a bit less common in the US due to regional tastes, but NY has a ton of amazing spots.
