replying to u/rightanglerecording: I have been legitimately impressed with: Chambers, Chez Ma Tante, One Five, Le Crocodile, La Vara, Casa Mono, Fulgurances. None of them are exactly cheap, but none of them are stupidly impossibly expensive either.

replying to u/some1105: Sounds like you choose shitty pop ups. Every pop up I have been to has been worth it. I go entirely based on chefs whose food I want to eat. I don’t care about hype. Paola Velez at Nordstrom. Woldy Reyes at Edy’s Grocer and one other restaurant I can’t remember the name of. Nasrin Rejali at a now-closed coffee shop—she now has Nasrin’s Kitchen. Multiple chefs at Fulgurances, as that is their whole business model. I have never once felt ripped off, but then I go in with a sense of adventure.
