I also love Buddha Bodhai, tasty handpulled noodle's veg option is so good, spicy village's veg dry option is awesome. Not in Chinatown, but I love Mala project, Joe's steam rice roll and very good noodles for vegetarian Chinese food.

replying to u/crazeman: West Rice Roll King is my favorite because there's hardly ever a line there AND they close late (7pm is super late for a rice noodle spot). Plus it's a open kitchen so you get to watch the guy make the rice noodles. They also use a old school stone mill to grind the rice into paste (you can see the grinder by the window). [According to Joe Steamed Rice Roll's owner (first 1:30 of the video),](https://youtu.be/Sq76i7tiDtE?si=zRaL8sHn2bTpsPjt) a lot of restaurants does not grind their own rice and would use rice powder to make the rice noodle instead. He also claims that the old school stone grinders are better because the newer ones usually run on higher speed and that heats up the rice as it's grinding, which changes the texture of the rice roll.
