replying to u/MrCakemeat: The only place I can think of that hits all your criteria is Ushiwakamaru. If you go, request Hideo, head chef when you book. Nakazawa tends to be a favorite among less experienced sushi fans. It’s not bad, especially in its price range, but it’s fairly impersonal and cookie cutter (as you observed). Also, the tamago, while good, is not atsumaki style.
