New York is fixated on Texas style barbecue and its probably because good Texas style barbecue can be found in cities like Dallas and Austin. However, barbecue in the south is very much a hole in the wall food with many storied restaurants in the middle of no where and many styles of barbecue aren't even represented here. For example, in the deep south a Carolina style barbecue focusing on ribs is dominant in places like Alabama/Mississipi. 2. Biscuits. Good biscuits do not exist here. I've tried all the places suggested here. Even a lot of southern fast food chains like Bojangles, Hardees or Biscuitville do excellent biscuits that just run circles around anything in New York. 3. Fried chicken that is similar to Willie Mae's in New Orleans or Gus's Fried Chicken (which is a regional style). For whatever reason when people do fried chicken they tend to imitate big chains, and just do it better. But the best fried chicken don't necessarily do a style that is similar to what your going to find in KFC/Popeyes. Many add things like cornstarch or flours into the mixture that results in very different crusts then what you might find. I miss those places from when I lived in Louisiana. 4. Waffle house. - I don't think there is a full understanding of why people appreciate waffle house. Waffle house experience is a lot like going to the delancy essex mcdonalds at 3:00 a.m. on saturday.
