replying to u/One-Pain-9749: As someone who’s worked in NYC specialty coffee for 8 years (from barista to green coffee qc to consulting), it’s a lot of moving parts—most of it being the high overhead of the city combined with slim margins. A lot of coffee shops don’t serve quality coffee because quality coffee costs money. That’s why you see a ton of Parlor, Devoción, Partners, and Variety wholesale accounts. It’s sort of above average coffee that doesn’t cost a ton, gives them adequate wholesale support, and is consistent. Another factor is the pace of the city. Most people don’t want to slow down for good coffee, and serving good coffee can take a bit longer. I think it’s also hard to find baristas who give a shit and want to make a quality product because of how exhausting NYC service can be, especially in coffee shops. Overall, I do think NYC lacks compared to other cities. It annoys me that everyone wants to roast their own subpar coffee to save money rather than trust people who know how to source good coffee and roast well. I wish we had more multi roasters that actually brewed coffee well and consistently, but I’m grateful we at least have some.

replying to u/justflipping: There's good coffee in NYC (La Cabra, Sey, Dayglow, Not as Bitter, Drip, Black Fox, etc). But there's always going to be naysayers. The high cost does make it harder to churn a profit, so you might not always have multiple single-origin coffees on offer, large spaces to hang out in, etc. If you're happy with it, that's fine. Don't let others drag down your experience.

replying to u/elbowgrease28: Coffee nerd / neighborhood friendly barista here: IMO, good coffee is roast dependent: some places roast their own, but a vast majority of third wave coffee shops use Partner’s / Devocion / Brooklyn Roastery / etc etc etc. This is why you can find similar flavor profiles (aka… consistently underwhelming) across multiple shops. I have been to some places that do amazing things with those beans (Bittersweet in Fort Greene!), and just gotta flag that there are a lot of barriers to roasting your own coffee, especially with NYC Zoning. Also, it depends on your barista. They can take well roasted coffee and make it taste like shit, and they can work miracles out of shit coffee. You That all being said, as a fellow espresso nerd, some I know and love that roast their own coffee, with t staff that care: Seconding Ninth Street Espresso! The only espresso I trust. If you’re in Brooklyn: Daytime, Kitten Coffee, and Burly Coffee (from the barista with glasses).
