replying to u/DinerEnBlanc: LOVE Shuya. It's currently tied with Ramen Ishida for my favorite ramen in NYC. Have you tried OKONOMI/Yuji? They have a pop-up next to Koreatown. I tried it today and quite enjoyed it.
