It's more "slow braised pork belly" than it is chashu in all honesty, but you get a giant thick slice of super well rendered pork belly, which is one of my favorite things in the world.

replying to u/Gamejudge: I’ll chime in with a few places I’ve enjoyed recently: EAK ramen - especially any of the broths with or adding spinach. Ramen Danbo - you can customize a LOT from the firmness of the noodle to the thickness of the broth so if you’re picky that’s a plus. KEI - the ramen were a 9.5/10 in my book, broth was around a 7/10, but my brother loved the broth more than I did. Jin ramen- their tonkotsu or spicy tonkotsu are the way to go, I don’t know why but the volcano is lacking flavor. With that out of the way… I miss the days when ippudo was at the top of its game. I haven’t had a better bowl in the city than the spicy karaka-men circa 15 years ago. I don’t miss how few ramen places we used to have though lol. The truth of the matter is there’s a bunch of really good places all over the city now, it’s harder and harder to find bad ramen specialty shops.

replying to u/pookgai: I'm honestly still searching for a good Ramen shop. I try a new place everytime and still havent found a spot that I can solidly recommend. If youre looking for Tsukemen, i can 100% recommend Okiboru in LES. Tsukemen is my favorite style and Okiboru is the only spot that nails the taste and texture. Ive tried tsukemen from many shops in NYC and CA and Okiboru is the closest to my experiences in Japan.

I'm someone who's literally been alive for the entirety of the existence of ramen in NYC, and have basically maintained a list like this, continuously iterating, in my head for as long as I've been able to go around on my own and eat bowls. I remember when ramen-ya in the city served gyoza, not a crappy gua bao à la David Chang. My favorite spot atm is Jeju Noodle Bar lmao, but it's not traditional at all. I just really like what they're doing! And their take on a gyukotsu is insane. But for Japanese ramen, my current top spots in no particular order: * Ramen Ishida for their take on modern Tokyo-style shoyu ramen. * Okiboru for niboshi tsukemen (honestly the best tsukemen in the city imo). * Nakamura for the genius on display by Chef Jack Nakamura. If you know anything about ramen, you know he's a huge name in the scene. We are absolutely lucky to have him in NYC. * Tsuta - I know the hype is real, and I only really went during opening week, but it was pretty good and a great representation again, of modern Tokyo-style shoyu ramen. * EAK, any location - I am a huge fan of Yokohama-style iekei ramen. This mini-chain rocks and is run by and owned by folks from Japan. * Za-Ya Ramen - Gyukotsu isn't a huge thing in the US, and these guys do one of the better ones I've had. * Danbo - probably my current favorite Hakata-style tonkotsu. * Tonchin - specifically the WB one, because I've been to the K-Town a few times and it isn't as consis…
