replying to u/niiro117: Amazing analysis. I knew none of this, and so am completely ignorant to if any of the following maps to this, but I find PG’s to often be too crispy/crunchy. I think I’m in the minority but I prefer a slightly chewy dough. L’industie is sometimes like this, Joe’s is usually like this. As I say it, maybe that’s more just the cook time?
