The only place that I've ever seen with someone pulling noodles not in the kitchen was the [OG Xi'an spot under the Manhattan bridge](https://www.yelp.com/biz/xian-famous-foods-new-york-5). It wasn't really performative because the spot was literally a hole in the wall and there was no space for the aunty to make the noodles anywhere else lol.
