  • replying to u/xlaurenthead: Burdick’s in SoHo. Made with ground dark chocolate (not cocoa), this has a very intense chocolate flavor. The first time I got it I couldn’t finish it because I wasn’t prepared for the intensity but it set a craving for more. Also if you can find it, Jacques Torres, there might still be one in Grand Central

    I love the spicy(ish) version of their hot chocolate with ancho and chipotle chilis. Both the spicy and regular versions of their hot chocolate use real chocolate rather than cocoa powder; it’s thick as hell and so good.

For a couple of months during college I was baking a batch of cookies a day tweaking every single variable. The cookie that inspired me to start doing this was: Jacques Torres. I was obsessed with recreating it and once I did I just kept going. Still enjoy their cookie. Their cookie mix is still good and it is literally the same as their publically available recipe. My favorite USED TO BE: Mah-Ze-Dahr. Boy oh boy how have their cookies have fallen. Pre-pandemic. They used to have nicely browned, delightfully chewy, chocolate chip cookies. They were excellent, not too thick like crumbl, chip city, or levain, not too wide large but still crispy. For a while, if you came in the afternoon, they were sold out. Because they were that good. Year over year I have watched as their cookies have slowly gotten worse. Every time I have gone in the past 2 years that have looked worse than the last. The last time I went, (11 days ago for my birthday), they were DISGUSTING. Pale, did not seem fully baked, STALE. No clue what has happened. I don't know if the staff just does not know how to bake them anymore or if they've made a change in their dough. All their other pastries are FINE. But man, I saw they were selling their dough and 4 years ago I would have JUMPED at the chance to examine their dough. Cookie was too bad for me to even consider it. /end…

    I'd say Maman, mah ze dahr, and Jacque Torres have the better chewy flatter cookies.

  • replying to u/thansal: While I'm not a fan of most of what Jacques Torres does, their bonbons are really fucking excellent, and while painfully expensive they're just in line with 'this is a lovely gift' land for me. Major plus is that there's enough options that you can cater each box to the person (pls don't give me any milk chocolate). I think the champagne corks are pretty meh (champagne flavor doesn't hold up against the chocolate at all). If you want to spend scary amounts of money there's always La Maison du Chocolat.

    The chocolate chip cookies at Jacques Torres are really good too.

    the cookie is good cold...saving it the next day its still really delightful in a different way than a standard chocolate chip cookie. Obviously warm > cold cookies. But for a cold cookie to still be craveable and addictive is special.

He's had levain a bunch since I live in Harlem and he didn't hate them but would not consider them crunchy/crispy/hard (think Tates style cookies) I actually brought some Janine’s cookies home for Xmas last year and he liked them enough but I agree the top layer is kind of the only crispy part (the pecan one was the big hit). They have insomnia and crumbl where they live and I know he doesn’t like crumbl cookies but I can’t recall if he had an opinion about insomnia. He’s had a black and white before visiting me, but never a crispy one. I haven’t come across one that isn’t cakey. Are the cookies at that spot crispier than the traditional black and white cookie? I haven’t been to Billy’s in a long time and didn’t enjoy the cupcakes but have never had their cookies. This is making me realize this may be harder than I thought or maybe more regional (?) to find bakeries that do crispier cookies.
