replying to u/the_chonkist: Some controversial takes. L'industrie and Scarrs are overrated, by a lot. My issue with L'industrie is they don't put enough cheese on the margherita slice. I feel bad writing this because they know me by name there (its the closest pizza place to me). The pizza game in NYC is so competitive now that you can find a great slice without waiting in an hour long line. These takes aren't "the best in nyc" but go here if you're close. Paulie Gee's Slice Shop - Hellboy slice .... they sometimes will give you a cold slice of pizza. They are sorta incompetent here and have quality control issues. When its fire its fire though. Upside Pizza - Really consistent, solid stuff. Joes Pizza - \^\^ Ace's Pizza - My fav detroit style, the supreme / hamburger / pepper trio are all great. Prince Street Pizza - my favorite square slice

replying to u/jellosghost: You are living in the golden age of sweet and savory. Pizza is a pretty logical start. Roberta’s Bee Sting is a classic. The Emily pizza at Emily. The Cherry Jones at Paulie Gee. Dousing a pepperoni slice at Scarr’s with hot honey. You get what I’m saying. Many Asian cultures use sugar with main dishes, like Korean barbecue or Vietnamese marinades. I’ll leave you with a specific dish, the whipped ricotta at Miss Ada, which is amazing.

replying to u/killerasp: From a dough pov, L’Industrie dough is much more complex in taste than Paulie Gee’s. There is a long thread on [pizzamaking.com](http://pizzamaking.com) trying to reverse engineer their dough: [https://www.pizzamaking.com/forum/index.php?topic=71691.0](https://www.pizzamaking.com/forum/index.php?topic=71691.0) and now that they reveled their dough recipe, it all makes sense to us home pizza makers. Only few pizza shops in NYC even come close to what they doing and it shows. It is quite amazing. Paulie Gee's dough is the standard NYC slice (high gluten flour, medium hydration, etc). It's still good, but L’Industrie is just on another level, and its not even close. PG, Joes, Luigis in BK, all standard NYC slice its great by NYC slice standards but L’Industrie is just in their own stratosphere.
