Western in the sense of the strong flavors of dry aged beef and a consommé that tasted very much like something you’d see in a French kitchen, but also Eastern due to the usage of thin slices of meat and that they are boiled rather than grilled or roasted like the vast majority of western meat dishes. It was unlike any other thing I’ve tried before yet it worked so well.”
